If there’s one thing I know it’s that potato, no matter which curry it goes in, always tastes yummy. I love potatoes, chipped, roasted, boiled or baked but when you stick them in a curry….well, I mean, what could be better? I’m completely in love with kale at the minute, so I whipped up this delicious alternative to spinach and potato with kale instead. I tried it vegan style this time and it was completely amazing!
Kale can be a little stubborn to cook, so make sure that it's nice and soft before you add in your potatoes. The last thing you want is to over cook the potatoes....you'll end up with mash! If you're not vegan, substitute the oil for butter and the coconut yoghurt for Greek yoghurt when cooking for a richer, more decadent curry. And finally, if you want to use spinach, the ingredients are essentially the same but the cooking time is less. Once the spinach has been stirred in and wilted down, you can stir in the potatoes too. Leave the pan cooking with the lid on over a low heat until the potatoes are cooked through (15 minutes or so) and follow the remainder of the recipe as it is. Enjoy! xAloo Palak
