If there’s one thing I know it’s that potato, no matter which curry it goes in, always tastes yummy. I love potatoes, chipped, roasted, boiled or baked but when you stick them in a curry….well, I mean, what could be better? I’m completely in love with kale at the minute, so I whipped up this delicious alternative to spinach and potato with kale instead. I tried it vegan style this time and it was completely amazing!

Aloo Palak

Serves: 6 Prep Time: 15 minutes Cooking Time: 40 minutes

Ingredients

  • 2 medium white onions, peeled and diced
  • 10 medium new potatoes, sliced into rounds
  • 200g fresh kale, stalks removed and chopped finely
  • olive oil for cooking
  • 1 tsp garlic puree
  • 1 tbsp ginger puree
  • 1 thumb fresh ginger, peeled and chopped finely
  • 2 fresh tomatoes, blended
  • green chillies, chopped finely (optional)
  • 3 tbsp coconut yoghurt
  • 1 tsp garam masala
  • 3 tsp ground coriander
  • 1 tsp mustard seeds
  • 1 1/2 tsp salt (or to taste)
  • 3/4 tsp paprika
  • 3/4 tsp curry powder
  • 3/4 tsp red chilli powder
  • 1/4 tsp turmeric powder
  • fresh coriander, chopped

Instructions

  1. Heat a little of the oil in a large, flat based, non stick pan and add in the mustard seeds.
  2. Stir in the onions and gently brown until golden in colour.
  3. Stir in ginger and garlic puree (you’ll need the chopped ginger later) stir in until combined.
  4. Stir in blended tomatoes and allow to reduce to half.
  5. Stir in the chillies (if using) along with all of the spices and salt. Cook for 1 minute over a medium heat to release the flavours of the spices.
  6. Stir in the coconut yoghurt until fully combined.
  7. Reduce heat and gradually stir in the kale little by little and allow it to wilt down. Once all the kale is combined in the sauce cover the pan and simmer for 20 minutes until almost cooked through.
  8. Increase to a medium heat, remove lid and stir in potato rounds until fully combined in the kale and sauce. Reduce heat, cover and simmer for a further 15 minutes (adding a little water if necessary to help the potatoes to cook).
  9. Once the potatoes are fully cooked stir in the chopped ginger, and allow any excess liquid to cook away with lid off.
  10. Remove from the heat. Sprinkle over the fresh coriander and serve with hot buttered chapattis.

Notes

Kale can be a little stubborn to cook, so make sure that it's nice and soft before you add in your potatoes. The last thing you want is to over cook the potatoes....you'll end up with mash! If you're not vegan, substitute the oil for butter and the coconut yoghurt for Greek yoghurt when cooking for a richer, more decadent curry. And finally, if you want to use spinach, the ingredients are essentially the same but the cooking time is less. Once the spinach has been stirred in and wilted down, you can stir in the potatoes too. Leave the pan cooking with the lid on over a low heat until the potatoes are cooked through (15 minutes or so) and follow the remainder of the recipe as it is. Enjoy! x
