The only way to eat salmon….well ok maybe not the only way but you know what I mean. Freakin amazing, I have converted many seafood ‘haters’ with this simple recipe. Super quick and so easy you’ll love it just because it only takes 10 minutes!
If, like my kids, you find salmon a bit fishy then simply coat the fillets in natural yoghurt and leave to sit for a few hours before cooking. Rinse off the yoghurt a few minutes before you start prepping and pat them dry with some kitchen towel to remove any excess water.
The yoghurt takes away the strong taste of fish and is much milder for fussy beggars. Seared Salmon with Chilli and Lemon

1. Melt the butter in flat non stick frying pan, on a medium/high heat. Place salmon fillets skin side down in melted butter and leave to sear for approx 3 minutes.
2. Turn fillets over (skin side up) and sear salmon until golden brown on top and cooked through. Approx 4 minutes.
3. Remove from pan and set aside in a serving plate.
4. Reduce to medium/low heat and fry spring onions and garlic in the butter for 1 minute until just sizzling.
5. Stir in lemon juice and chilli flakes, increase heat and continue to stir vigorously until mixture is bubbling. Season to taste.
6. Pour over salmon and serve immediately.
