Karahi Gosht can be made using lamb, mutton or even beef. Any red meat works great really, you just have to remember to adjust your cooking times. I use lamb or mutton pretty much all of the time. This spice mix gives your meat curry a really great, full flavour and texture.

If you’re vegetarian substitute the meat for a red meat alternative and adjust the cooking time in stage one of the cooking process in accordance with the cooking instructions for the meat substitute. If you’re vegan switch up the butter and yoghurt for olive oil and coconut yoghurt or similar. Works a treat.
