Tarka Daal, the one item on a restaurant menu everyone steers clear from. In a restaurant I understand why, daal is a difficult one to master. Too much seasoning and it’s overkill, too little and it’s bland. This spice mix will give you a whole new outlook on your daal curry. You may even ditch the meat in your diet altogether after you try this!

If you’re vegan simply substitute the butter and yoghurt for olive oil and coconut yoghurt or similar. Works a treat.
